Most coffees from Colombia are processed using the traditional washed method, but not this lot. Honey processed coffee is a method where ripe coffee cherries are pulped, leaving some sticky mucilage (the sticky substance surrounding the coffee bean) intact during drying. This layer ferments slightly, imparting unique flavors. Once dried and milled, the beans reveal a balanced acidity, medium body, and distinct sweetness, making honey processed coffees favored for their nuanced flavors. Even though there’s no actual honey in it, we still think it’s the bee’s knees.
